Middle Eastern Spiced Lentil Soup
A golden Shorbat Adas style soup seasoned with fragrant cumin, turmeric, and garlic, simmered with red lentils in vegetable broth and finished with fresh lemon juice.
Warm, restorative, and deeply aromatic, this Shorbat Adas inspired soup comes together in less than thirty minutes. Earthy ground cumin and golden turmeric bloom in rich extra-virgin olive oil alongside minced garlic before simmering with red lentils into a savory, vegetable-rich broth. A bright squeeze of lemon juice stirred in just before serving ties every warm note together.

Method
- 1
Warm the extra-virgin olive oil in a large soup pot over medium heat for about 1 minute until fragrant and shimmering.
- 2
Add the minced garlic, ground cumin, ground turmeric, and organic chili powder to the pot, stirring gently for 1 minute until aromatic and lightly sizzling.
- 3
Whisk in the vegetable broth concentrate, then pour in the vegetable broth and water, adding the salt and black pepper; raise the heat to medium-high and bring the pot to a boil, about 4 minutes.
- 4
Stir in the rinsed red lentils. Lower the heat to low, cover the pot partially, and let the soup simmer steadily for 20 to 25 minutes, until the lentils are tender and the spices meld deeply into the broth.
- 5
Turn off the heat and stir in the fresh lemon juice. Let the soup rest for 1 minute.
- 6
Taste and adjust the seasoning with an extra pinch of salt if desired, then ladle the hot golden soup into four warm bowls to serve.
Leftovers keep well in an airtight glass container in the refrigerator for up to 5 days; reheat gently on the stovetop over low heat.
