Method
- 1
Cook the chopped bacon in a wide stainless steel or cast-iron skillet over medium heat for 5 to 7 minutes, stirring often, until crisp. Transfer the bacon to a plate, leaving about 2 tablespoons of fat in the skillet.
- 2
Add the extra-virgin olive oil to the skillet if needed, then scatter the chopped black garlic into the skillet and sauté for 3 to 4 minutes, stirring often, until fragrant and lightly crisped around the edges.
- 3
Add the minced garlic and dried thyme to the pan, cooking for 1 minute until aromatic and golden without letting the garlic brown excessively.
- 4
Stir in the frozen peas and cook for 3 to 5 minutes, until heated through and tender.
- 5
Pour in the apple cider vinegar and water to deglaze the skillet, scraping up any caramelized bits, and simmer gently for 2 minutes until the liquid reduces to a glossy glaze.
- 6
Stir the crispy bacon back into the skillet. Season the mixture with salt and black pepper, toss thoroughly over low heat for 1 minute to coat evenly, and transfer immediately to a warm serving dish.
Store leftovers in an airtight glass container in the refrigerator for up to 4 days. Reheat gently in a dry skillet over medium-low heat for 2 to 3 minutes to restore texture.
