Method
- 1
Preheat the oven to 400°F (200°C) and line a small baking sheet with parchment paper.
- 2
Slice a gentle lengthwise slit into each Medjool date and pull out the pit, keeping the date whole.
- 3
Tuck 1 whole almond inside the center cavity of each date and gently pinch the seam closed.
- 4
In a small ramekin, whisk together the avocado oil, smoked paprika, salt, and freshly ground black pepper.
- 5
Cut each bacon slice in half crosswise. Wrap one piece around each stuffed date and secure with a toothpick, if needed.
- 6
Set the dates seam side down on the baking sheet.
- 7
Bake at 400°F for 18–22 minutes, turning once halfway through, until the bacon is crisp and the dates are caramelized.
- 8
Remove from the oven and allow to rest on the baking sheet for 2 minutes before serving warm.
You can stuff and season the dates up to a day ahead; simply cover and refrigerate them until ready to bake. For extra crunch, toast the almonds in a dry skillet for 2 minutes before stuffing.
