Grass-Fed Ghee Golden, nutty, and rich, ghee is butter that has been slowly simmered to remove the milk solids and water, leaving pure butterfat. Pure Indian Foods makes theirs from the milk of grass-fed cows. It’s a source of fat-soluble vitamins and butyrate, a short-chain fatty acid that helps nourish the cells lining the gut. Because the milk solids are removed, ghee is often well tolerated by people sensitive to dairy. Its high smoke point makes it ideal for sautéing, roasting, and frying. Add it to kitchari, stir it into rice or oatmeal, or spread it on warm toast.
